Make sure you have all the ingredients before you begin
Carefully chop the chicken into cubes
Chop the spring onions length ways. Grate the garlic.Deseed the chilli and finely chop.Deseed the pepper and slice. Wash the bay leaves and chop
Chop some more
Peel the skin of the chorizo then slice. Wash the tomatoes and chop them in half. Put them in a bowl and set aside for later.
Add the pepper, spring onion, garlic, chilli, cooked prawns and bay leaves. Then add the spices 1 tsp smoked paprika, 1 tsp turmeric, 1 tsp chilli powder
Fry the chicken and Boil the linguine
Put a saucepan of water on and boil the linguine for 10 mins till the pasta is soft ! drain and rinse and set aside for later. Add 1 tbsp. olive oil and fry the chicken on a medium heat. Continue frying turning the cubes till they just start to brown
Add the chorizo
Move the chicken to the outer edges of the pan and add the chorizo. Keep turning the chorizo as it browns on both sides and the white bits start disappearing.
ADD tomatoes and season
Move the chorizo to the outside of the pan with the chicken. Add the tomates and season with salt and pepper. Cook on both sides till the skins start to come away.
Skin those toms
Remove the pan from the heat. With your kitchen tweezers [you must buy some of these] remove the tomatoe skins.
In goes the prawns and bits
In goes the bowl of prawns, peppers, garlic, chilli, onions and bay leaves with the accompianying spices.
Stir in the linguine
stir in some more
Stir in the tinned tomatoes and continue cooking for 4-5 minutes stirring constantly. Serve with grated parmesan
